Grain Free Chocolate Chip Cookies
I don't know about your family, but we've certainly been doing more baking since we're at home a whole lot more these days. I've always been a baker, it just comes naturally to me, but I've started to enjoy experimenting with different flours and healthier ingredients.
Grains and gluten, in general, do not affect me too much; unless I happen to overindulge...then I think it's only natural to feel uncomfortable. The more I began to study about them through my nutrition schooling. the more I find it fascinating how grains have changed over the course of our history. With that said, I don't think they're something that we need in our everyday diets often. I also know first hand how hard that is to step away from.
Anyways, I digress. Whether you have to, prefer to live a grain-free lifestyle or just want to humor me and try out a grain-free version of a classic cookie. I hope you give these a shot! I promise you can find all of these ingredients at your local grocery store, in fact even the ground flaxseed is at Aldi and for a very reasonable price. These have an almond butter base, which I think helps keep that traditional chocolate chip cookie flavor. But, feel free to experiment with different nut butters you have on hand, even peanut butter.
These do not make very many, which can be good or bad, because I can guarantee they won't last long in the house! Enjoy!
Grain-Free Chocolate Chip Cookies
Ingredients:
1 cup almond butter
1 egg
2 tbsp coconut sugar
1/4 cup raw honey
1-1/2 tbsp ground flaxseed
1 tsp vanilla extract
1 tsp baking soda
1/4 tsp salt
1/2 cup chopped nuts
1/2 cup chocolate chips (I used milk chocolate)
Directions:
Preheat oven to 350 degrees.
In a large bowl, combine together the first eight ingredients using a mixer. Fold in chopped nuts and chocolate chips.
Drop dough by tablespoonfuls onto prepared cookie sheets. Bake for 10 minutes. Remove from the oven and let cool completely before transferring to a cooling rack.
Makes 16 cookies. Will last a few days in a storage container, after that best stored in the fridge for a longer shelf life. I have not tried freezing these, but I assume they would hold up in the freezer for a couple of months.

DIY Elderberry Syrup
In the winter months our family likes to add elderberry syrup to our daily regimen. It's a fantastic way to boost to immune system because let's face it; there are a lot of germs and illnesses floating around. Now matter how healthy you eat, we don't get as much natural vitamin D in the winter months here in the Midwest especially, and a little boost never hurts.
Most years I have purchased our syrup online or from a local natural foods store, but it's not exactly cheap. Plus I'm always leery about the added sugars in some brands and prefer not to have that included. Bad bacteria in our guts feed off of the sugar and it sets you up for getting sick, so I'd just rather eliminate cane sugar as much as possible especially during the winter.
If you can get your hands on dried elderberries, I've found that it's actually really cost effective to just make your own. I found mine at our local Natural Grocers, but you can also find them on Amazon if you don't have anywhere local to find them. I promise, if you just give yourself 90 minutes at most on a weekend or whenever you have the extra time; it will be worth your while.
Let me explain a little bit about why I think you should be adding a dose of elderberry syrup daily:
- Not only does it boost the immune system, but it can help shorten the duration of a cold. Studies have shown that a cold can be reduced by up to two days with the use of elderberry, as well as the symptoms seem to be less severe.
- It has also been shown to reduce inflammation, due to its high vitamin A and C content, along with anthocyanin (antioxidant). You may also see some relief in allergies while using elderberry as well.
- Can help with constipation
- Promotes healthy skin because of the high Vitamin A and antioxidant content
- May improve cardiovascular health, along with high blood pressure
Hopefully by now I've convinced you to at least try it out. We're early enough into the season, try an experiment and see if adding a little elderberry helps keep the bugs at bay this winter. If you're really up for the challenge, I encourage you to try making your own at home. You will need a sweetener when making this, and I prefer to use a good source of local honey. Yes honey is sugar, but when it's locally sourced it has so many wonderful benefits as well for our bodies.

DIY Elderberry Syrup
Ingredients:
3/4 cup dried elderberries
3 cups water
1/2 cup good quality honey
Directions:
Place dried elderberries and water in a saucepan, bring to a boil on the stove. Once the mixture comes to boil, reduce heat to a steady simmer and let cook for 1 hour. Mixture will be reduced by about half.
Remove from heat and let cool for several minutes.
Strain syrup into a bowl, pressing the juice out of the berries using the back of a wooden spoon. This will help to get all of the nutrients out of the berries. Discard the berries.
Mix in honey until well dissolved and transfer to jars. The mixture will not be a thick syrup, but that's okay. You can mix in 1/4 cup more honey or so to thicken if you'd like.
Store elderberry syrup in the fridge for up to 3 months. Makes about 10 ounces.
For use: children take 1 teaspoon daily, adults 1 tablespoon. If you have a cold or the flu; you can double your dose for extra benefits.

Buffalo Chicken Chili
Winter is quickly approaching here in Iowa, I'm afraid. We've got some pretty low temperatures forecasted this week with a little snow mixed in, and I'm not happy one bit. Hopefully that will change around though and we can continue to enjoy a little more fall like weather.
In the meantime though, I'm diving right into the warmer dishes of the season. Our bodies crave warm foods this time of year. Although we want comfort, our meals don't have to be filled with empty calories. I made this for the family this past week and I'm quite pleased with not only how it turned out and tastes, but with the nourishment it provides for our bodies.
Incorporating foods like garlic, broth and various veggies are so good for our immune systems in the fall and winter months when we're not being exposed to as much sunlight.
If your family enjoys buffalo wings and the hot sauce flavor in general, then they will like this! It's slightly spicy, but not too much. I am providing you with measurements, but certainly feel free to use less or more of the sauce. It's officially time to start adding more soups, stews and chilis to our menus; I hope you love this one as much as I do!
Buffalo Chicken Chili
Ingredients:
1 tablespoon avocado oil
1 small onion, diced
2 garlic cloves, minced
2-3 cups chicken broth (depends on how thick you'd like it)
14 oz. can fire roasted tomatoes
3 celery stalks, diced
1 large carrot, diced
14 oz. can white beans, drained and rinsed
1 cup frozen corn kernels
2 chicken breasts, cooked and shredded (or about 3 cups shredded chicken meat)
1/3 cup buffalo wing sauce
1/2 tbsp chili powder
salt and pepper, to taste
Directions:
In a large sauce pan; saute avocado oil and onion for about 5 minutes. Add in garlic and let cook for an additional minute. Then add in all remaining ingredients, stir to combine well and let cook on medium-low for about 20 minutes or until heated through. You may add in more buffalo sauce or chicken broth to adjust heat and/or consistency of the chili.
Serve with various toppings such as: cheese, cilantro (for a nice cooling balance) or even a little bit of your favorite ranch dressing. We did add a few crushed up grain free tortilla chips to ours and that was a nice touch!
You may also let this cook in a slow cooker all day on low.

What to Expect the First Year {College Edition}
This has been a post on my mind for several months now, and I think I'm just slightly qualified to write it. Especially since I just sent our daughter off to begin her second year of college a couple weeks ago. {Insert tears} No, but really, I have struggled with this new season a little more than I ever expected. But, it's also such a fun time in our lives. I've witnessed a complete transformation in her, in a good way, of course. She's growing up, maturing, figuring out her path and what she wants out of life and it's just a whole lot of fun to sit back and watch it all take place!
So, this is my post for you mamas. The ones that are getting ready to drop their babies off in the next couple of weeks. The ones that aren't sure what this new season of life may bring.
If you are like me, you made it through graduation, the open house celebration and every other important event without breaking down. It's a time for celebration, right? There was no need to cry or feel sad. We did it! I say we, because us parents have just as much claim in that diploma as they do.
You've hopefully spent time this summer enjoying last minute trips, embracing these "final" days together, making them their favorite meals and treats and shopping trips for all of the dorm essentials.
The day is set, you've probably got two car loads of belongings to take with and you're moving your kiddo into their new home away from home. You might have a bit of an anxious feeling in the pit of your stomach, holding back tears that you don't exactly know where they're coming from. And then you get there, and there's so many students and families all doing the exact same thing you are. It's crowded and you quickly move boxes and totes from the car to the itty bitty dorm room. If you're lucky, you'll get to stay and help them set up their new arrangement. But, in all reality, there just isn't enough room and it's time to let them go. You've done your job, you've set them up for success and now it's time to let them fly.
Driving away was the hardest. Giving that final hug before we got back into the car was not easy. I instantly got into the car and literally began bawling. And I'm not going to lie, that whole week afterwards was difficult. There were tears out of the blue. The walking past her bedroom and it being so empty. The getting used to one less person in the house. It was just a new normal and it takes time getting used to.
If I had to give you a few tips for the upcoming school year, they would be:
1. Give yourself grace and let yourself grieve. Like I said, it's just a new normal. It takes time getting used to the changes. Even though we as parents are happy for our children, it's okay to feel sad. They are growing up and not needing us as much anymore. It's fun and a little sad at the same time.
2. Be prepared for full laundry baskets when they do return home for visits! Haha! I'm serious though. But, I'm pretty sure you won't mind doing some extra laundry again for the weekend.
3. It never gets any easier watching them drive away. When it's time to head back from the holidays, winter break, etc. You might still find yourself fighting back tears. It's almost like it starts all over.
4. Have faith that you raised them well and they will make the right decisions in life. You have to step back now and let them figure things out on their own. It's not easy, but they have to make the mistakes. They might fall, but you better believe they'll get right back up. You did good mom and dad!
5. Cook their favorite meals and snacks for when they come home. Visits are few and far between, so ask what they'd like to have for dinner. You have to remember, those cafeteria meals don't compare to mom's home cooking!
6. They might not admit it, but they get a little homesick too at times. Phone calls, text messages, facetime calls; they want to share their new life with you just as much as you want to hear about it. I pray that you are able to keep in touch with your child just as much as our daughter does with us. They love receiving fun surprises in the mail too!
7. Sit back and enjoy this new season! Life is beautiful. Be sure to enjoy each and every moment. This new season that you're in; it's one to be cherished.
So dear mama, I know what you're feeling. I really do. And, I'm here sending you a big hug and lots of love during this transition. You've done good. Now, it's time to sit back and enjoy the ride.

Chia Seed Pudding
If you're like myself and need to be careful with sweets or that inner sugar dragon comes out real quickly; then this recipe is for you!
Do you use chia seeds in your house? Ever had a pudding made with them? This is something fairly new to our household. And, I really like it! I'm thinking of it as a dessert or treat, but I would totally let the kids eat this for breakfast if they wanted. I can only imagine how full and satisfied they would be all morning long in school.
Most everyone doesn't geek out over nutrition and the science behind food, but I'm going to share a few health benefits real quick regarding chia seeds. I want you to really understand why they're good for you. Not only do they help keep inflammation in our bodies in check, they are high in fiber, which I'm sure you could always use a little more of. They are great for digestion, known to help reduce belly fat and can improve insulin sensitivity. They're a pretty awesome healthy fat, and I think you should keep a bag in your pantry at all times.
Often times I see them added into smoothies, but I'm hoping you give this pudding a try. It's pretty basic and very versatile. You could add in some cocoa powder for a chocolate version. Add different fresh fruits on top. I was pretty basic and mashed up a few frozen strawberries that we picked in June. I also added a few Lily's chocolate chips on top. It certainly satisfied my sweet cravings.
Chia Seed Pudding
Ingredients:
2 tablespoons chia seeds
3/4 cup coconut or almond milk
1/2 tablespoon Swerve sweetener (you may also use honey, maple syrup or agave)
Fruit toppings
Directions:
In a small bowl mix together chia seeds and milk, add in desired sweetener. Please note that I have only tested this recipe with Swerve. If using a different form of sweetener, start small and work your way up to your desired taste preference.
Pudding will begin to thicken. Divide into two servings, it makes enough to fill one 8 ounce jar. You may serve immediately or let chill in fridge for 1-2 hours to thicken even more. Serve with choice of toppings.

Ditch the Cereal! {Kid-Friendly Breakfast Ideas}
I might ruffle some feathers a little bit here, but I'm going to state it: Our kids do not need cereal every morning for breakfast. Or ever, honestly. Take a look down the food aisle, or in our pantry cupboards and I'm sorry, but these have become more like dessert and we're serving it every day in a rush to get out the door on time.
I don't know about your kiddos, but many times mine are starving come lunch time. Cereal doesn't exactly keep them full and ready to take on a full morning of learning. Did you know that most cereals are 75% sugar? Therefore, causing our body's energy levels to go through it's own sort of rollercoaster; up and down all throughout the day. Plus, have you ever noticed within your own self, that you crave more sugar and carbs throughout the day once you begin with cereal, pop-tarts, muffins or donuts? Consuming sugar just makes you crave even more sugar.
But, I'm not here to lecture. We're all doing the best we can, I know we are. And when we know better, we can do better. I also understand that there's just not a lot of time in our schedules to prep a bunch of foods. Oh do I get it! We're rushing around in the mornings getting ready and packing lunches just like everyone else, and I'm in the classroom with our kiddos all day too.
I want to give you some ideas for healthier, more filling options for that first meal of the day. These are all kid-friendly because my own girls love them, but they work for us as adults too. Yes, some require some advanced prep work, you can fit this in on the weekends or any time you have a free moment. I know you're busy, I really do, and I also know that if it's important to you, you always find a way to get it done.
There are also times where a quick egg and toast breakfast are what works. We do this often in the mornings and take it on the go. Cooking up an egg takes no longer than it does to pour a bowl of cereal, honestly. And, if your kiddos just really do enjoy that bowl of cereal or whatever it is you have, then I'm going to ask you to at least pair it with some sort of protein like an egg. Help fill their little stomachs up for the morning so they can focus longer and be productive in their day. I think you'll notice an improvement in so many areas.
Let's take a look at a few suggestions:
Healthier Breakfast Options:
Coconut Flour Pancakes
Low-sugar Baked Oatmeal
Quick 2-minute Ham & Egg Bowl Now, everyone has time to make one of these. You can even prep them ahead of time. You could add in chopped up peppers and onions for extra nutrients and flavor. These are great for adults too, not just the kids.
Breakfast Quinoa
Freezer Smoothie Packs These are so versatile! We always use either almond or coconut milk, coconut gives extra healthy fats that are great for the brain and helping to keep our kids full for longer periods of time. You can also add in avocado for extra creaminess without adjusting the taste of the smoothie, the kids won't even notice it's in there! Tossing in a little bit of protein powder or nut butter is great as well.
Buckwheat Pancakes
Veggie and Sausage Frittata You can easily make this for dinner one night or ahead of time on the weekend, and just slice and reheat throughout the week.
Yogurt Parfait My only tip here, is to make sure to avoid sugar laden yogurts. Otherwise our efforts are tossed out the window. There are some better yogurts on the market now sweetened with stevia and such.

Egg Crust Pizza
It seems like everyone I know these days is trying to follow a more low carb lifestyle, which makes my heart happy! Our bodies don't need all of these processed food products and grains. We can get enough carbs in our day just through wholesome foods like vegetables, for instance. I'm not saying you shouldn't ever turn down your favorite foods and treats, it's just that we don't need them in our lives as often as we probably are consuming them.
Life would be pretty boring without some of our favorites like pizza. Pizza is good! We probably have it for dinner almost once a week. I came up with this healthier version so I can still satisfy my pizza cravings, but not feel so bloated from the dough afterwards. The girls have yet to try it, but I did make one for the hubby last night and it passed his test. He can be pretty picky at times too, so this is a win in my book.
I'm definitely not the first person to ever make a pizza crust using eggs, I've seen them before. But, I'm using the whole egg and not just egg whites. I pay a pretty penny for my local eggs and I don't want to waste any bit of them. Plus, the egg yolk is so good for you! You've heard me say this before, just eat the whole egg!

Egg Crust Pizza
Ingredients:
2 whole eggs
Coconut oil, butter or avocado oil; for greasing pan
Pizza sauce
Mozzarella cheese
Choice of toppings
Directions:
Grease a 10-inch saute pan well with choice of healthy fat (coconut oil, butter or avocado oil). Make sure to grease up sides of pan.
Let pan warm up on stove over medium-low heat. Meanwhile, in a small bowl, beat together two eggs. Pour eggs into pan and let cook for a few minutes. As eggs are cooking, make sure to run spatula along the edges and lift egg to prevent sticking.
Once egg is cooked almost completely through, add a little bit of pizza sauce on top of egg. Spread with a spoon, the amount you use is up to you. Sprinkle toppings over the sauce and finish with mozzarella cheese. Place a large plate over the pan and turn down to a very low temp, let the cheese melt and toppings heat for 2-3 minutes.
Remove plate, if cheese is melted, turn off the stove and remove from the pan. Your pizza should slide out nicely with the help of your spatula. Serve on a large plate, cut into slices and enjoy!

DIY Coconut Milk
I've never been much of a milk drinker, not even growing up. Chocolate milk was something I remember drinking on occasion, but I really just never liked the taste of cow's milk. I even preferred my cereal dry because I hate soggy textures. I seriously would try to eat my bowl of cereal so fast, just to prevent any of it getting soggy!
I have never forced my girls to drink cow's milk, although the majority of them enjoy it. But, they also have come to love other types of milk, such as almond. Up until a few months ago, almond milk was a huge staple in our house. I make a smoothie every single day and have always liked to something other than just water as my base. Unsweetened almond milk was generally my choice. Unsweetened because of the high sugar content in the sweetened variety. Remember, read those labels! And honestly, when you're mixing it into fruit and other ingredients, you can't even tell the difference.
If you follow along on my social media platforms, then you know I had a hard time with kidney stones earlier this year. I ended up needing surgery and it wasn't fun at all. Since this was my second time getting stones, I have followed up with my urologist and did some testing. My lab results came back showing that my calcium levels were high. Without having seen my doctor and knowing exactly what that meant for me, I decided to start eliminating some things in my diet where I might be getting too much calcium.
Almond milk was the biggest change. I don't know if you have ever paid attention, but the majority of our foods nowadays are fortified with additional vitamins and minerals. Almond milk has 45% of our daily requirements for calcium. And, that's just in an 8 ounce glass. There are times where I was using a good ten ounces for my smoothies. I began to really pay attention to the labels and searched out a new alternative.
I started using this brand of coconut milk, again the unsweetened kind, of course. The ingredients matched what I was looking for and the calcium level was by far the lowest I had seen in any other variety of milk in my area. In fact, I can only find it at my local Target store. It's also $4.00 for one half gallon container, more than double the amount I typically paid for the almond milk. But, it was exactly what I wanted, so you just learn to pay the money and I stuck to only using 8 ounces and adding a little bit of water.
I've since discovered a way to make my own though and saving myself some money. Literally this is so simple and I'm a little disappointed that I didn't think of it sooner! Making your own almond milk on the other hand, yes, that requires more time and energy.
Did you know how healthy coconut is for you, by the way? It's a form of a healthy fat, something that we need in our bodies and for our brains. Even if you don't typically like the taste of coconut, I would challenge you to give it a try; especially when blended into a smoothie or protein shake, you won't necessarily taste the coconut flavor.
If you're into DIY projects and making things at home, rather than purchasing at the store; this is for you. If you're already a fan of coconut milk, you must try this. And if you're an avid almond milk consumer, try this variety. I think you'll be pleasantly satisfied. Cheers!
DIY Coconut Milk
Ingredients:
13.5 oz. can coconut milk (found in health area or by other canned milks)
Water
Directions:
Open can of coconut milk and dump into blender. Fill can with water about 3 times and add to the coconut milk. My blender was completely full, I was able to get almost three full cans in there. Cover with lid and blend together well.
Divide milk into large mason jars or any large beverage container of your choice. I like the mason jars just so I can shake before using in my smoothies. Store in fridge, use within 7-10 days.

Bacon Wrapped Pesto Chicken
Chicken can be a hard sell in my house, especially with the kids. Do you have this problem as well? I can't really blame them, if you're not careful, chicken breasts are can be really bland and tasteless.
I've spiced up these chicken tenders with a little bacon and pesto, because who doesn't love bacon?! If you're not sure about the pesto, go ahead and bake some without the sauce. Experiment with others if you'd like as well, buffalo is great, ranch might even be tasty!
Add this main dish to your summer lineup, it will go perfect with all of the fresh veggies coming out of the garden. Break out the grill if it's too hot to cook inside, and this would be fantastic topped over a big salad the next day for lunch! So many simple ways to enjoy this dish, the kids will be begging for more.
Bacon Wrapped Pesto Chicken
Ingredients:
1.5 pounds boneless, skinless chicken tenders or breasts cut into smaller strips
1 pound bacon
Pesto
Directions:
Season chicken with salt and pepper. Spread pesto over top of each strip, then wrap one slice of bacon around each piece of chicken.
Place chicken onto a baking sheet and bake at 350 degrees for 20 minutes or until chicken is cooked through. Serve chicken with desired sides.

Food Labels 101
Food labels, do you pay attention to those when you're shopping? If you don't, then I'm going to encourage you to begin now. When we become more aware of what's in the food that we're eating, then we can start to make better choices. Not only for ourselves, but for our family members.
I'm not talking about worrying about the calories or fat content. I'm specifically talking about the ingredients. It's no surprise that we should aim to be eating a whole foods based lifestyle, one with foods that are pure to the earth. One without a ton of processed food products and fast food.
A lot of times I find that especially as women, we can get caught up in reading how many calories we are taking in; but yet, not giving any thought to the artificial sweeteners and other crazy things that are put into our food.
I also get that not everyone cares like I do. I get it! But you should! This is your only body you get, it's up to us to take care of it. I don't expect you to be perfect, or to become obsessive. That's not exactly healthy either. I just want to help educate you and for you to be more aware.
So, where do you start?
The absolute first thing I want you to focus on is eating more REAL food. Food that doesn't come in a box or from the freezer with fifteen ingredients. If you're not used to eating like that, it will take some time. It won't be exactly easy, but I promise, it's worth it and you will begin to feel so much better! Okay, moving on. Let's cover some ingredients you need to consider avoiding. I encourage you to educate yourself even more, do your own research, and you will need to decide which are important to you and your family. There are some ingredients that we absolutely avoid, and others that I try my hardest to but let's be real; it's not always possible. Especially when you eat out at restaurants or are eating with other friends and family. And let's be completely honest, there are times when the Oreos get tossed into the cart.
Pay attention to the following:
High fructose corn syrup
Vegetable, canola, corn oil
Aspartame, Sucralose and other artificial sweeteners
Anything that you cannot pronounce
There are tons of additives and chemicals that are put into our foods everyday, and it's hard to know what they all are and what they do. But if you can just be aware, that is the first step in the right direction.
There's actually a rule you might have heard of; only purchase processed foods that contain 5 or less ingredients, minus salt and pepper or other herbs. Especially ones that you can read and know what they are. That might be something you want to keep in mind when shopping.
Get the kids involved, let them practice their reading skills and help them to understand why we're passing on the fruit snacks and instead choosing fresh, in season watermelon instead. Make it fun! If it's not around, they can't have it and are less likely to ask for it. Yes, it takes time and it's an adjustment. But, I promise, it's more painful on us than it is on them. Give it two weeks and I think they will come around and it won't even be a big deal anymore.
I certainly don't want to overwhelm you and I hope that's not how you're feeling today after reading. There is so much to learn and understand when it comes to ingredients and what's going into our food; it would be impossible to cover everything in one sitting. Coconut Flour Pancakes
Pancakes are always a favorite for not only breakfast, but dinner time as well. Whether it's due to an allergy, not liking the bloated feeling afterwards or just wanting to experiment with different ingredients; these pancakes are perfect for the whole family!
Regardless of your own particular food beliefs, flour isn't what it used to be. Our society eats a mostly high carbohydrate and processed food diet, and it's just not good. But, that's honestly for a whole 'nother discussion.
I have tried many recipes for grain free and healthier pancakes, and I have finally found the perfect recipe I want to include in my own family's rotation going forward. You know those banana/egg/oat pancakes that everyone was going crazy for not long ago? Yeah, those have nothing on these.
These are a closer consistency and texture to your standard all purpose flour pancake, and they do not taste strongly of coconut. I won't lie, there's a hint of taste, but it's not overpowering. Especially, if you were to slather these in butter and enjoy with some syrup (real maple, please!), homemade jam or almond butter as I did.
Try them, see what you think. They are not complicated at all and use wholesome ingredients. Ingredients which will help keep you feeling satiated much longer than your typical American pancake recipe.
Coconut Flour Pancakes
Ingredients:
2 eggs
1/2 cup heavy whipping cream
1 tsp vanilla extract
1/2 tablespoon Swerve sugar substitute (or honey)
1/4 cup coconut flour
1/2 tsp baking soda
1/4 tsp Himalayan salt
Butter
Directions:
In a small bowl, mix together eggs, cream, vanilla and Swerve. In a separate bowl, combine coconut flour, baking soda and salt. Add wet ingredients into the dry, and stir together.
Melt about 1 tablespoon of butter onto a skillet or griddle over medium heat. Pour batter into the skillet to form pancakes. Be careful not to make too big, they can be difficult to flip the bigger they are. Cook on each side for 2 minutes, or until golden brown.
Makes 6-7 pancakes. Top pancakes with desired syrup or toppings.

Take Back the Kitchen Series
Gosh, it's been awhile! Almost a full year. I've missed writing. A lot! Even though I'm very much active on social media, it feels good to be sitting here typing away. I've missed writing blog posts and it's something I really am ready to jump back into. I hope you're ready!
I told you all about how I was feeling a little frustrated with some of my family's eating habits and what was being brought into the house. Yes, I do the majority of the grocery shopping. I take the blame. I also am pointing fingers at the hubby. The girls sure do know how to work him over!
Regardless, we're putting some brakes on. I declared, mama's taking back the kitchen!
What does that exactly mean for you and your family this July?
Well, whatever you want it to be. I'm hoping you'll join forces with me and take back YOUR own kitchens! It can look different for everyone, and I encourage small steps.
Maybe you will cut back or eliminate pop or soda in your house, and encourage more water instead.
Begin reading labels more and paying attention to ingredients.
Cooking at home more often.
Taking family walks in the evenings.
Having each child or family member choose a new vegetable or fruit to try each week.
And, maybe you're not going to be quite ready to embrace this as a whole family. As parents, it's important that we are taking care of ourselves first and foremost. So that we can be around and be at our best for our children. It's okay if you focus on making some of these changes in yourself first, and then in your family when the timing is right. It's just important that you start.
What can you expect from me in July?
Well, my hope is to bring you recipes, valuable information and tools that you can use in your own busy lives to become even just a little bit healthier. We are all at different points in our lives and that's okay.
I plan to share new recipes in all food categories: breakfast, lunches, dinner, snacks and even side dishes. I'll be sharing some new healthier spins on some of my favorites as well.
I will also be covering the importance of learning to read food labels and what that can do for your family's health.
Dealing with picky eaters, getting your family to drink more water, dinners on the go, what happens when we allow ourselves to survive on so much sugar. I've got it all covered!

Homemade Peach Frozen Yogurt
We're just a week away from school starting back up and we're trying to enjoy every moment as much as possible. Getting back into routine, earlier bedtimes, waking earlier; you know, the usual. It's also prime peach season right now! I ordered a 25 pound box from a local farm back in June when we picked strawberries, it's become part of our summer routine. They have connections with another farm in Michigan where they get blueberries and peaches every summer for customers. We place our orders and they arrive all boxed and ready to go. It's quite wonderful, and these peaches are always so delicious! The ones you get from the grocery store just do not compare.
So now I'm playing the what do I make with all of these game? I slice and flash freeze the majority of them; we'll enjoy them all winter long in smoothies, oatmeal and just by themselves. I did make a peach crisp on Sunday that was fabulous. Our little 8x8 inch pan didn't make it long in our house between the five of us. But, if you've been following me on social media for any length of time, then you know I just cannot make all these desserts. It's not apart of my lifestyle anymore, and I just don't need them. I wanted to come up with a little healthier of an option. And I just haven't been feeling like canning much lately, even though jam is a great way to use up so many.
That's when I decided to try making my own frozen yogurt. A little bit healthier (when done right) than regular ice cream, and a way for me to be able to enjoy some without wrecking my weight loss goals. I don't know about you, but I feel like we go through a ton of ice cream in the summer months with the kids. They request it almost every night after dinner it feels like. And going out for a treat just adds up, it gets very expensive to feed that many people.
Made in the food processor, and with just four ingredients, this has quickly become a favorite in our house. In fact, I told you that the girls have already requested I try making strawberry next. I will say, Greek yogurt will definitely give it a pronounced tangy aftertaste, so if that's not something you like then just stick with regular yogurt. I liked the Greek batch, but the girls said it tasted funny. They're not big Greek fans though either. The agave syrup gives it just enough sweetness, plus peaches are typically sweet to begin with.
I just love the fact that I'm getting even more nutrients into my day and getting to enjoy a sweet treat all at the same time! You'll even notice in my pictures, that I keep the skin on when I freeze my peaches. Why not? They process just as well, and again, if I can get more nutrients into our day, then we will. This will certainly be a welcome treat come those long winter days. Feel free to experiment with different frozen fruits, the combinations are endless!
Peach Frozen Yogurt
Ingredients:
4 cups frozen, sliced peaches
1/2 cup plain regular yogurt (Greek also works)
1/4 cup agave syrup
Juice from half of a lemon
Directions:
In a food processor, dump in all ingredients. Secure lid and begin to process. It will take a good 5 minutes to come together, you will have to stop a couple times to scrape down sides. Once the mixture is all combined, you may transfer to a freezer safe bowl and enjoy immediately. Place the remaining frozen yogurt covered in the freezer and it will keep for one month.

Cauliflower Rice Pizza Bowl
Whelp, it's already August and summer is just about over with. Not quite sure how I feel about that haha. I love my job and the kiddos; but man I also love being home with my own kids and doing our thing.
Another thing I love. This pizza bowl! A friend and co-worker from school mentioned how she created a pizza bowl using cauliflower rice as her base recently, and I was intrigued. And then in typical Steph fashion, I had to recreate my own. I had this for lunch the other day, and I have to say it's pretty darn delicious. In fact, I'm certain I will be adding this into my rotation for work lunches.
I made mine over the stove top, but you could heat yours in the microwave easily. Or the oven. In fact, when I head back to work; I'll probably just mix everything together in a reheatable bowl so I can quickly warm up in the lounge.
This makes enough for one serving, so just double your ingredients or more, if you're feeding the family. If you're on the fence with cauliflower rice, I promise you this doesn't even seem like you're eating a ton of veggies! But, you could begin with half regular rice and half cauliflower. Start small and work your way up.
Cauliflower Rice Pizza Bowl
Ingredients:
2 cups frozen cauliflower rice
1/2 cup chopped green pepper & onion
1 tbsp Italian seasoning
salt and pepper, to taste
1/4 cup pizza sauce
chopped pepperoni
crumbled,browned ground beef or sausage
sprinkle of mozzarella cheese
Directions:
In a medium pan on the stove, heat cauliflower rice for 3-4 minutes. Stir in chopped peppers and onion, along with seasonings. Let cook for a few more minutes. Then add in pizza sauce and meat toppings. Cook just until heated through. Before removing from heat, sprinkle cheese on top and let that set just until melted. You can place a large glass plate over top and turn off heat, and that will help the cheese to melt quickly. Remove from heat, and serve.
Makes enough for 1 serving.

Finding Joy Again During My Darkest Hour
In October 2014, I lost a baby. I had a miscarriage.
There, I said it. I've written this post several times in these last couple of years, never knowing quite what to say or having the courage to press publish.
I am 1 in 4.
Before then, I had no idea that miscarriages were that common. That they occurred more often than I could have ever imagined. That more of my friends and acquaintances have had to experience this same pain that I was, than I knew.
We weren't exactly planning for more children, but surprises happen and we were both excited and happy. Everyone knows I've always wanted a little boy. Maddux Allen, the name has been picked out since before our second daughter was born.
For reasons I cannot understand, we lost that baby at just ten weeks along. I was heartbroken. We hadn't told anyone yet of the pregnancy, we were waiting until Halloween and telling our families together. Then planning a fun announcement in November for everyone else.
I remember every moment of those next several days. It was hell, and I didn't think I could possibly cry anymore. I was moving through the motions of life, but not really living I guess. In fact, for the next year I felt that way. I remember watching babies during church services and trying to hold back tears. When friends would announce their own pregnancies, the tears would fall, the anger would overcome me. I even screamed out loud when I was alone because I was so angry.
Deep down I was a very angry and sad person. On the outside, my smile was there, yet fake at times. I loved being with my girls and husband. But something was missing. My husband had no idea until a year later, but I would cry myself to sleep often. After he would fall asleep or trying to just be as silent as I could. The tears would fall on my pillowcase. I felt alone in a very big world.
I lost a lot of weight following the miscarriage. Even though I was grieving and sad inside, I felt great in my clothes. That was probably the only good thing out of the situation. But soon after, between the demands of working two jobs and taking care of my family, I let myself slip. I didn't take care of myself like I should have. Instead of eating healthy, I was grabbing junk at night while working late. I was definitely an emotional eater. The weight slowly crept back on, and even more. That was one more thing to become unhappy about.
I talked about how I developed a word theme for my year, and it started in 2016 after the awful, long year I had experienced. Choose Joy was my theme. I even have a shirt with the message on and I wore it often. I still do sometimes. My mission for that year was to choose joy in all situations. I was tired of being sad and angry. And so I did, I tried my hardest to be truly happy.
I think I did a pretty good job. Of course, there were moments during the months where I was more emotional and would cry. In May of that year when we should have been celebrating the first birthday of our child, that was difficult. And again in October, on the anniversary of the miscarriage, I grieved. My family did their best to understand and support me. These dates are still hard for me.
But through that year in 2016 something clicked, something changed inside of me. I had decided to quit the second job at the end of May. So I was home more in the evenings with my family and that was great. I was still very unhappy with how I had let my weight creep back on. My clothes were feeling pretty tight. Summer was coming and I couldn't just hide in sweatshirts, and I refused to buy a bigger size.
Late June of that year I decided to tackle running. I've always wanted to be a runner. Our oldest runs and my husband was a track athlete in high school. So I promised myself I would actually put the treadmill to use that we purchased several years ago and start the Couch to 5K program. I would run my first race in October with my family, an event that supports our local school district. I was going to commit to exercising, eating healthier than I had been and doing something for myself. I was going to become a little more selfish with my time and not feel bad about it.
And, so I did it. I stuck with it and kept training, and ran my first 5k in October 2016. My husband ran with me and pushed me the entire way. I remember being so nervous that morning, yet excited as ever! Afterwards it was the ultimate high. I felt amazing, I had never accomplished something like that before. As a very non athletic person, to have run over three miles was huge for me. I wanted more, I didn't want to just stop there.
I had already been talking with a friend and asking more questions behind the scenes regarding what she had done to lose 30+ pounds. I decided right before Halloween to purchase my very first at home fitness program package. It was a brand new martial arts/kickboxing program that was being released. It looked like fun and it was the perfect new challenge for me. I would commit to completing the 30 day program and work even harder to clean up my nutrition. I've tried workout videos before, but would become so sore after just a few days that I would give up. This time, I would not do that. I was far too excited and motivated to change for the better.
I was added into a private online accountability group where we would log our workouts each day and my coach would post motivational messages, tips, recipes and such each day. We all quickly became like family, a fit fam I guess you could call it. We were there to hold each other to our word when we didn't want to complete the workout for the day, and yet cheer each other on as we became stronger.
That month went quickly. I became stronger, learning new moves each day and feeling fierce. I was working all day in the classroom and then coming home to press play on my videos. And instead of feeling tired, I had more energy. I also began to realize that the pain from my miscarriage was lifting a bit. I didn't find myself crying as often. I was truly becoming a happy person again.
Almost two years later and I'm still doing that home workout thing. It's become my new normal, it's my lifestyle. I am still in the same group, with many of the same individuals whom have become some of my closest friends. Except now, I'm helping to lead them each day. That first program I ever did, I'm now certified to teach.
Beginning this new lifestyle has not only helped me lose weight, become stronger than I've ever been before, helped me heal during the most difficult time in my life so far; but it's also restored a passion in me that I had forgotten about. A love for health and nutrition, and for helping others. It's also helped me find a strong passion for fitness. I love doing it all. Through all of this I finally feel like the old Stephanie, and I love myself. I truly love everything about myself, and I feel confident again.
I wish I would have talked to someone, anyone, throughout that first year, especially those first months. It was painful to go through that feeling alone. Even though my husband and closest family members were there for me, it just wasn't the same. It's not a pain you can understand well, until it happens to you. Fortunately, I did overcome it. I turned to a different outlet to help me heal and create my own happiness again. But, if there's anything I have learned from my own experience, then know this: you did nothing wrong. It's not your fault. You will get through this, the pain never quite goes away completely, but you will be okay. I am here for you if you need a listening ear.

Meal Prep: Buffet Style { $25 Visa Gift Card Giveaway!}
Meal prep has become the new freezer cooking. For years everyone was obsessed with adding meals and meal components to their freezers so they could quickly pull out supper each night to thaw and reheat for their families. When moms would have a new baby, we would arm them with tons of meals so they wouldn't have to worry about cooking for a week or longer. I was very much apart of that movement. In a way, I still do some of those things.
Now, all I read and hear about it meal prep. I see magazine worthy photos of fridges stacked with containers upon containers of prepped food ready to go for the week. Simply grabbing one and going about your day. Is this something you've tried to help in simplifying your own busy schedule?
I think it can be an overwhelming thought for sure when it comes to getting started with meal prep. There's so much information out there, and you probably think you need to have a whole week's worth of meals in the fridge ready to go. While, you can certainly do that and maybe that's what works best for you. It's not the only way.
Buffet style is one that I choose to implement in my own house, and one that I've done for several years now. Some weeks are better than others, but I always try to make sure we have a couple things at least ready to go. What on earth do I mean by buffet style meal prep? I'm talking about having foods like hard boiled eggs, cut up veggies and fruits, roasted root veggies, grilled chicken, prepared quinoa and brown rice all prepared and in separate containers in the refrigerator. When it comes time to eat, you can choose from a variety of foods you have prepared to create your lunches, etc. If you're not one that wants to eat the same exact dish for multiple days, then this would definitely give you the potential for more variety.
So, where do I start?
I think it's important to think about your own personal schedule for the week, your family's needs and what you all like. This will help you to determine which foods will be best to have prepped. You can certainly make up some soups, chili's or casseroles/one dish meals so those are ready to be reheated.
Here are just a few ideas for you to consider as you begin your own meal prep:
Protein:
Grilled/Roasted Chicken
Browned ground beef/turkey (seasoned taco meat would be great)
Hard, boiled eggs
Turkey bacon
Cottage cheese
Yogurt
Whole Grains/Carbs:
Roasted sweet potatoes or regular potatoes
Quinoa
Brown rice
Black beans
Oatmeal
Pasta
Veggies/Fruits:
Roasted veggies: Brussels sprouts, broccoli, squash, etc
Spinach/kale, washed and ready to go
Salads
Cauliflower rice: prepackaged is just fine!
Fresh made salsa (makes for a great salad dressing)
A variety of cut up fruits and raw veggies
Healthy Fats:
Mini guacamole cups or homemade
String cheese or any cheese portioned out
Almonds, cashews, pistachios portioned into small containers
If you begin with even a couple of items from each of the categories, you'll be able to put together some really healthy meals for your day. It will help to reduce stress, save you some money and save time.
Let's go over a few meal pairings for you:
Grilled chicken, brown rice, roasted broccoli
Hard boiled egg, oatmeal, fresh fruit
Mini guacamole cup, raw bell pepper strips, apple slices
taco seasoned ground turkey, salad w/salsa, black beans, strawberries

5 Ways to Improve Your Health This Week
Can we just sit down for a moment and talk about how quickly the beginning of the new year is going? Holy cow. Time needs to slow down for this mama, I'm not ready for graduation to be upon us so soon.
I mentioned a few weeks ago about my teaming up with a handful of other Iowa bloggers for the Live Healthy Iowa wellness challenge. It's my third year participating, representing the Iowa Food and Family Project's team and it's something I always enjoy. If you live here in Iowa, I'm sure you might have heard of this ten week challenge. It's really a fun way to kick off the new year and have a friendly competition while getting a little bit healthier.
Are you one that made some goals or resolutions in the new year? If you're like most Americans, then maybe you've already long forgotten about those and fell off the wagon a bit. Or maybe you're still cruising along, crushing them each week. I hope so!
It's easy to get overwhelmed when trying to create a healthier lifestyle. Everyone wants to overhaul their life in one day. And then they wonder why they get frustrated and quit. Begin by taking small steps, little changes at a time and then build upon those each week. Today I want to share with you five simple things you can be doing to really drastically improve your own health. No, you don't need to implement all of them right away. Maybe you already do most of these and then, I applaud you. Keep going!
1. Move your body most days of the week: Exercise, it's that simple. Maybe that means attending a group fitness class or joining a gym. At home fitness might work best for you. Walks in the evening with the family. Doing a few squats and push-ups when you have five spare minutes. Whatever you can fit into your schedule, just do it. You'll feel better and have more energy when you do.
2. Add at least one serving of vegetables and fruits to your meal plan each day: No, it's really not a lot in comparison to what you should be eating each day. But, it's a start. And it might be the only fresh produce that some get. Start slow and then build upon that each week. There's bound to be at least one veggie and fruit that you like.
3. Drink your water! You should be aiming to drink half of your body weight in ounces of water each day. So, if you weigh 140 pounds, then you should be drinking at least 70 ounces of water every day. And I'm going to say that's water only. I'm not counting coffee, tea or other beverages in that amount. Water is really the cheapest way for you to improve your health and even lose weight. It helps to keep you hydrated of course, flushes out toxins in your body, regulates your digestion and improves the quality of your skin.
4. Practice a little self-care: This will look different for everyone. Think about what you love to do, and simply do more of it. Give yourself some time to read before bedtime. Take an afternoon nap. Relax in the bathtub with some Epsom salts. Little things like that. Take care of yourself so you can be at your very best for your family and those around you.
5. Get enough sleep each night: I realize everyone is in different seasons in their lives. But it's so important to your health to be getting a good amount of sleep. Have you ever paid attention to your eating habits when you're really tired? You end up craving more junk and not making very good food choices. If you're exercising, sleep is important so that your muscles can rest and recover. Plus we are able to function better in our day when we've had an adequate amount of rest.
These are really not rocket science or anything new. I know you've heard them all. Hopefully they are things you are practicing on most days, but I also know there's always room for improvement. We should strive to be a little bit better each day!
Being apart of the 10-week challenge, these are really things that we're all working on right now. As team members we are all working together to cheer each other on as we document our daily activity minutes, weight loss and just overall physical wellness.
