Zesty Grilled Chicken


Happy fourth of July! Today is also the hubby's birthday, it's always fun being able to celebrate him on this special holiday. We're not doing a whole lot except traveling up the river to be with my parents for the remainder of the weekend.

Of course we'll be grilling later for dinner, it seems to be the one unspoken rule for the holiday weekend. This happens to be one of our favorite marinades for chicken breasts and perfect for the grilling season.


It reminds me of a chicken dish we used to order at a local restaurant years ago before they closed. The marinade comes together so quickly. I always try to let it soak throughout the day for the best flavor, but of course there's times when I only have a couple hours to do so. It still turns out just as good. If you want to keep a little extra out for basting while cooking, that's a plus, but not necessary of course.

Zesty Grilled Chicken

Ingredients:
2-3 boneless chicken breasts
6 tbsp vinegar
3 tbsp olive oil
2 tbsp ketchup
1-1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp oregano
1/2 tsp hot sauce
1/4 tsp Worcestershire sauce

Directions:
In a small bowl, combine together all ingredients except chicken breasts. Mix well and set aside.

Place chicken breasts into a large Ziploc bag and pour marinade over the chicken. Massage the sauce into the chicken. Remove air and seal bag. Let chicken marinate in fridge until ready to prepare.

When ready to grill meat; remove chicken from bag and discard contents. Grill chicken for 7-8 minutes on each side, or until juices run clear.

You can also bake these in the oven at 375 degrees for about 25 minutes, or until juices run clear.

Serve with your favorite side dishes.
