Cowgirl Cookies


During Christmas time I made up a few gifts in a jar to hand out, these cookies were one of them. I hadn't ever tried out the recipe, just came across them on Pinterest. They turned out really cute and I substituted red and green M&Ms to make them more festive. Anyways, we got a thank you note last week from my daughter's preschool teacher stating that her family loved the cookies and she was inspired to bake more often now! Of course I had to try them out for myself and I just happened to have a few helpers ready to help me!

These turned out to be really good cookies and so easy to mix up. I love that you can change the color of the M&Ms to go along with whatever holiday happens to be current. We used red and pink for Valentine's Day coming up. I mixed up my dough like I would normally for any cookie recipe but here is the original recipe so you know how to put these jars together, I wish I would have taken a picture of mine now!

I love that you're not left with a bunch of cookies after baking these, I got about 2 dozen. If that's still more than you want laying around the kitchen, package some up and take to work or give to neighbors. Otherwise stick them in a container and pop them in the freezer, cookies freeze so well! You can then just pull out a few at a time for a treat and not feel like you're going to overindulge.

Cowgirl Cookies

Ingredients:
1/2 cup butter, softened
1/2 cup brown sugar, packed
1/2 cup white sugar
1 egg
1 teaspoon vanilla
1 1/3 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup quick-cooking oats
3/4 cup M&Ms
3/4 cup semi-sweet chocolate chips
1/3 cup chopped pecans


Directions:
Cream butter and both sugars in a large mixing bowl. Add egg and vanilla and mix well. In a separate medium bowl, combine flour, baking powder, soda, salt and oats, mix well. Slowly add to butter mixture, mix well to combine. Stir in M&Ms, chocolate chips and pecans. Using a medium sized cookie scoop or teaspoon, drop balls of dough onto prepared cookie sheets. Bake at 350 for 10 minutes or until slightly browned. Makes 2 dozen cookies
